		<description>Thank you for the inspiration and insight!  I love the idea of looking at cheese through an incredibly contemporary lens.  Why not?  You can appreciate and cultivate incredibly high quality product while maintaining a real sense of joy and discovery.   Wish I could have seen the 15 foot trough of cheese!</description>
