I love Queso Fresco and i agree with you, it doesn’t get enough of the spotlight. It’s good. As in really, really good.
Pairing it with duck confit (ah hum.. from Chez Panisse) was pure genius. But you knew that already. The genius part.

That looks very tasty!
We sadly don’t have much Latin representation in the grocery stores or markets here in suburban Canada. Must be the weather!
